Smokey Sweet Potato & Fresh Heart Hash

This sweet and smokey hash is a quick and easy way to enjoy fresh hearts of palm with some other fragrant and flavorful ingredients.

 
 

Ingredients

  • 1lb fresh heart of palm, sliced

  • 1 large sweet potato, cubed small

  • ½ yellow bell pepper, diced

  • ½ red bell pepper, diced

  • 1 small red onion, diced (makes about ½ cup)

  • 2 tsp smoked paprika

  • 3 tbsp olive oil

  • Coarse sea salt and fresh ground pepper to taste

  • Parsley for garnish

 
 

Instructions

  1. Preheat oven to 375°

  2. Mix all ingredients in a large bowl until the oil and spices are distributed evenly

  3. Spread out all ingredients on a parchment paper lined cookie sheet and bake for 17-20 minutes.

  4. Remove from oven and let cool off for a few minutes

  5. Serve, garnish with parsley, and enjoy!
